Brief content | During the last years, a considerable effort has been paid to the development of green, eco- friendly technologies allowing to convert agricultural raw materials into chemical products having high added value. Plant enzymes can play an important role to fill a gap in the market, as a potent tool for the preparation of natural aroma compounds by biotransformation. Biotransformation allows to prepare a whole range of natural products with a positive impact on human health and food quality. |
